For February 2017 we welcomed Fifth Spire Gin from the Greywood Distillery in Lichfield as our Gin of the Month.
Best friends Rory and Tom, local to Lichfield with engineering backgrounds set out to construct one of the UK’s smallest micro-distilleries.
The gin is constructed in two parts using twin copper stills. The result is a luxuriously smooth spirit with a classic gin taste riding on a big wave of fresh citrus.
One still is loaded with juniper berries, coriander seed, cassia bark, angelica root,
orris root, liquorice root, pink peppercorns, almonds, and Seville orange peel.
The other still is for fresh citrus fruits including lemons, limes and grapefruit.
The Perfect Serve
Using a balloon glass and some large chunks of ice add a generous pour of Fifth Spire Gin, top up with 1724 Tonic.
Garnish with a dried orange slice and cinnamon stick - delicious.
