Our honey oak gin has been created through a novel steeping process. The process involves using “green” Cornish oak blocks that have been cut from the heart of a fallen oak tree. The reason for using this wood is because that is where most of the natural sugars and tannin reside. The blocks are toasted and then immersed in Cornish honey for a period allowing the wood to draw in the honey flavour. The oak is then decanted out of the honey and left to steep in Trevethan original gin. Over a period of 6 / 8 weeks the gin starts to colour up with the diffusion of honey and oak tannin and natural sugars being released from the wood.
If a tonic is required we would recommend a Fever Tree Mediterranean tonic or their Sicilian lemon tonic as both of these tonics will balance well with the subtle flavours of the gin . Garnishes can include apple and ginger or apple and cherry. **Please note this bottle shape does not fit in any of the silk gift bags**
